The owner is easy to talk to, a really nice guy, and the prices are reasonable! I highly recommend this place to tourists who want to avoid being ripped off like at other restaurants. They accept credit cards with no extra fees.

Highly recommended. I've been to a number of restaurants in Santiago and this is absolutely top 2 (with the other one being a little outside of Santiago). I brought some of my extended family here during a trip to Lake Atitlan where we were staying in Santiago. There were 7 of us total. They quickly put together a table for all of us on the second floor balcony. The owner/chef is friendly, welcoming, and incredible. He speaks good English, which allowed the 5 people in our group who couldn't speak Spanish to ask questions and here more about the restaurant. The conversation with the chef felt like part of the experience.nnThe food is quite well done. It's creative, thoughtful, and interesting. It's also very reasonably priced.nnI've sometimes struggled to find a restaurant in Santiago for dinner, but Germinacion was an absolute success. I will definitely return!

One of the most incredible dining experiences I had in Guatemala was at the Germinación restaurant in Santiago Atitlán. The food is simply delicious, made to order, with fresh ingredients and a lot of care — everything prepared in front of me by chef Hiram, who is also the owner of the restaurant. He speaks Tzʼutujil with his staff, which makes everything even more authentic.nnThe first time I ate sea bass, which was very tasty. The second time, I had a steak, which was succulent and came with great sides: guacamole, onion vinaigrette, rice, beans. Everything was delicious!nnIn addition to his talent in the kitchen, Hiram has a special charisma that transforms the meal into a true experience. He gave me great tips on restaurants in Guatemala.nnAnd that's not all: he also runs the Tierra restaurant, on the shores of Lake Atitlan, with a super pleasant atmosphere and a café next door that is pure charm.nnIf you're around here, be sure to check it out — it's a must-see!
